This sparkling wine is made primarily from the Mauzac grape, with small amounts of Chardonnay and Chenin Blanc. The production of this sparkling wine follows the traditional method, which includes a second fermentation in the bottle. The grapes are hand harvested and fermented in stainless steel tanks. After the initial fermentation, the wine undergoes a secondary fermentation in the bottle, where it is aged on the lees for a minimum of nine months.
